Ingredients
For the Chicken:
- 1 whole chicken (about 1/2 kg), cut into 8 pieces
- 1/2 liter of water
- 2 dried lemons
- 2 MAGGI® chicken-flavored bouillon cubes
For the Rice:
- 340 g basmati rice
For Cooking:
- 2 tablespoons ghee
- 3 medium onions, finely chopped
For the Spice Mix:
- 135 g yogurt
- 150 ml warm water
- 3 garlic cloves, finely chopped
- 3/4 teaspoon ground black pepper
- 3/4 teaspoon ground cumin
- 3/4 teaspoon ground coriander
- 3/4 teaspoon turmeric powder
- 3/4 teaspoon ground cardamom
- 3/4 teaspoon ground cinnamon
- 1 pinch of saffron
Preparation
Cook the Chicken: Place the chicken pieces and water in a large pot, bring to a boil, and skim off any foam. Add the dried lemons and MAGGI® bouillon cubes. Cover and let simmer on low heat for 30-40 minutes until the chicken is tender. Remove the chicken pieces and set them aside.
Prepare the Rice: Add the basmati rice to the chicken broth and boil for 10 minutes or until almost cooked. Drain the rice and set aside.
Cook the Onions: In a large pot, heat the ghee, add the onions, and cook for 5-7 minutes until golden brown. Add the cooked chicken pieces and stir gently.
Layer the Biryani: Mix the yogurt with the spices and garlic, then pour over the chicken. Cover the chicken with half the cooked rice. Drizzle half the saffron water over the rice, then add the remaining rice on top, finishing with the rest of the saffron water.
Final Cooking: Cover the pot and cook on low heat for 25-30 minutes until the rice is fully cooked and infused with the spices.
Serve: Fluff the rice gently. Serve the Chicken Biryani hot in a large serving dish and enjoy the burst of flavors in every bite.
