Chicken Rice is a traditional Mauritian dish that perfectly combines aromatic rice, tender chicken, and rich flavors. Ingredients
For the rice:
- 400 g of chicken, boneless, skinless, and cut into small pieces
- 20 g of dried Chinese mushrooms (Shiitake)
- 2 shallots, finely chopped
- 1 inch of ginger, julienned
- 250 g of carrots, cut into cubes
- 750 g of white rice, washed
- 600 ml of water
- 1 tablespoon of frying oil
- 2 teaspoons of sesame oil
- 2 tablespoons of finely chopped green onion tops
- 1 tablespoon of fried salted fish (optional)
- 2 tablespoons of chili (optional)
- 3 sprigs of basmati leaves
For the sauce:
- 2 tablespoons of MAGGI® oyster sauce
- 2 teaspoons of light soy sauce
- 1 tablespoon of dark soy sauce
- 3 tablespoons of water (adjust according to the type of rice used)
Preparation
- In a saucepan, heat the oil. Fry the shallots and ginger until they release their fragrance.
- Add the chicken, carrots, and chopped mushrooms. Fry for about 5 minutes, or until the chicken becomes tender.
- Add the sesame oil, the sauce mixture, and let it simmer for 3 minutes on medium heat. Once done, set aside and prepare the rice.
- In a rice cooker, cook the rice with 600 ml of water, then place the basmati leaves on top. When the rice is nearly done (all the water has been absorbed and the grains are puffed up), add the cooked chicken. Mix everything well.
- Leave the rice cooker covered for an additional 10 minutes to allow the flavors of the sauce to be fully absorbed.
- Before serving, sprinkle the dish with green onion tops and fried salted fish to add extra flavor
